Pizza prep refrigeration tables VPS (Venturi Plenum System) is Traulsen’s advanced system of air ducts and baffles that funnels cold air flow around the bottom, sides and tops of all the ingredient pans. It insulates your ingredients from the warm ambient kitchen air.

A Traulsen exclusive, VPS eliminates warm and frozen areas and greatly reduces unnecessary waste. Perhaps most important of all, the superior quality of your ingredients allow you to make a superior product.

(How it Works) The Venturi Plenum System
The Venturi Plenum System (VPS) surrounds the product with cold air — top, bottom and sides are all equally cooled with the gentle movement of cold air. Pans are cooled evenly. Product is kept fresh and safe.
